When there are figs it’s time for fig jam! It’s super easy to make just boil figs, sugar, lemon and spice it up with cardamon or cloves too!

Ingredients
- 300 g black figs ~ 1 lb
- 150 g caster sugar
- 1 juice of a lime
- 1/4 tsp ground cardamon
Instructions
- Sterilize glass jars by boiling in water. Let cool down and dry.

- Dice figs.

- In a 1 qt nonstick saucepan, add 2 tbs of water. Toss the diced figs, sugar, cardamon and stir.

- Bring to a light boil, stir occasionally and simmer over moderate heat. The figs will release water.

- Continue cooking until jam turns shiny and you can draw a line in the spoon without the liquid running.

- Transfer the jam into glass jars and leave a bit of space at the top. Close the jars and tightly. Store for up to 3 months in refrigerator.

- For longer storage boil closed jars in water for 5 min. Cool upside down at room temperature.
