Hey there, fellow foodies! Can we talk about the mouthwatering awesomeness of cherry blossoms?Β  Have you ever witnessed their stunning beauty in full bloom during springtime? It’s like a fairy-wonderland! Whether you had the chance to witness cherry blossoms in Japan or admire them in your local park, why not try making your ownΒ  Sakura inspired dessert! One of my favorite cherry blossom desserts is the Cherry Blossom Strawberry Shortcake – a heavenly treat that captures the essence of spring in every single bite!

The arrival of cherry blossoms marks the beginning of spring and is celebrated with Hanami, the appreciation of cherry blossoms. There’s just something special about gathering with loved ones under those blooming trees.

And let me tell you, Japan knows how to do cherry blossoms justice! They use them to make all sorts of cherry blossom dessert like mochi, cookies, teas, cakes, panna cotta, and macarons. The delicate floral flavors and almond-like taste of cherry blossoms addΒ  twist to these sweet treats that will leave you dancing with joy!

Thankfully you don’t need to travel all the way to Japan to experience this deliciousness. The National Cherry Blossom Festival in Washington, D.C. is an iconic event, and other cities like Philadelphia and New Haven also have their own “Subaru Cherry Blossom Festival” and “Wooster Square Cherry Blossom Festival.” I had the amazing opportunity to witness the beauty of cherry blossoms in Philadelphia and New Haven, and let me tell you, using foraged fresh petals to make desserts is an absolute delicacy! These blooming beauties have inspired me to get creative in the kitchen, and start whipping up Asian-style cakes known for their fluffy and light texture, like the Cherry Blossom Shortcake here.

Now, let’s talk flavors, people! One of my go-to ways to celebrate cherry blossom season is by making a luscious cherry blossom syrup to use in all sorts of desserts. Think cocktails, lattes, cherry blossom whipped cream, and of course, cakes! A classic strawberry shortcake gets a delectable twist when you add cherry blossoms into the mix. Trust me, the delicate floral and almond-like sweetness of the Cherry Blossom Simple Syrup will infuse the sponge cake with a burst of flavor that’s simply heavenly. And don’t get me started on the Cherry Blossom Yogurt Whipped Cream – it adds a creamy and almondy note that  complements the fresh strawberries, taking this dessert to a whole new level of deliciousness!

Cherry Blossom Tea

  • 3 cups Hot water (140Β°F – 185Β°F/ green tea temp)
  • 1 cup Cherry Blossom Petals
  • 1:3 petals to water ratio

Cherry Blossom Simple Syrup

  • 200 g caster sugar (1 cup)
  • 240 mL 240 ml Cherry Blossom Tea (1 cup)
  • 1 lemon (juice)

Cherry Blossom Yogurt Whipped Cream

  • 60 mL Cherry Blossom simple syrup
  • 200 mL heavy cream
  • 100 g plain greek yogurt
  • 12 g caster sugar

5-10 medium strawberries sliced

    Sponge Cake

    • 2 2 eggs
    • 60 g caster sugar
    • 60 g cake flour
    • 5 g melted unsalted butter


    Cherry Blossom Tea

    • Collect about 4 cups of packed cherry blossoms, wash and collect the petals only.
    • Place ~1 cup cherry blossom petals in a glass jar with ~2 cups of hot water and let sit overnight at room temperature.
    • Strain cherry blossom tea, store in a glass jar. Keep in refrigerator.

    Cherry Blossom Simple Syrup

    • In a saucepan, combine sugar and Cherry Blossom tea. Heat over medium heat, stirring constantly until the sugar has dissolved and volume has halved. Remove from heat and let it cool completely. Once cooled, strain the syrup to remove any tea leaves and store in a glass container.

    Sponge Cake

    • Preheat your oven to 350Β°F (180Β°C) and line a 9×5 inch loaf tin with parchment paper.
    • In a mixing bowl, whisk together eggs and sugar for 2 min. Continue whisking eggs over hot water (Bain Marie) until light and frothy ~5 min. COntinue whisking at room temperature until batter gets a pancake consistensy.
    • Sift the cake flour into the bowl and gently fold it into the egg mixture until just combined.
    • Mix 2 tbsp of batter into the melted butter, mix and pour into batter and fold gently.
    • Pour the batter into the prepared loaf tin and drop the tin against the counter to remove airbubbles.
    • Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let it cool completely.

    Cherry Blossom Yogurt Whipped Cream

    • In a chilled mixing bowl, combine heavy cream, yogurt, Cherry Blossom syrup, and sugar.Using an electric mixer, whip the cream on medium speed until it reaches stiff peaks.


    • Once the sponge cake has cooled completely, carefully cut into 3 even layers and remove top burnt cake.
    • Using a pastry brush, generously brush the Cherry Blossom Simple Syrup onto the sponge cake, allowing it to soak in.
    • Spread a layer of the Cherry Blossom Yogurt Whipped Cream on top of the sponge cake.Arrange sliced strawberry on top of the whipped cream and add whipped cream on top to fill crevices.
    • Repeat the process with another layer of sponge cake, Cherry Blossom Simple Syrup, Cherry Blossom Yogurt Whipped Cream, and strawberries.
    • Finish with a layer of Cherry Blossom Yogurt Whipped Cream on top.
    • Decorate the cake with additional strawberries and Cherry Blossom for an extra touch of elegance.

    Cutting and Serving

    • Refrigerate the Cherry Blossom Strawberry Shortcake for at least 1 hour to allow the flavors to meld together.
    • Slice with a serrated knife. Enjoy!
