But have you tried wineberries? These foraged berries are the star of this galette.

Japanese Wineberries are a delicious wild berry. The sweet fruit is similar to raspberries which makes it perfect for desserts, baking and jam!

We are making French galette! A rustic summer pie but much more easier! Galettes are just a flat round cake topped with fruit and folded edges.
Wineberries can be found growing wild in the Northeast in season during late summer (June-July). This was my first time foraging, which is a great way to spend time hiking while exploring nature and parks. Having something to look for while hiking makes hiking just more fun! Foraged wineberries are a great option for beginner foragers because there are no poisonous look-a-like and they are easy to identify!


You can even see wineberries them from the road sides. And you can easily identify them by looking for multi-stemmed thorny canes covered in short red hairs. The fruit is bright red when ripe and the top is held by a red hairy stem.

To make our galette we’ll combine wineberries, lime to make the filling for our galette, add some butter for richness, sugar for sweetness, and cornstarch as a thickener. Then we’ll put our filling on top pie crust before baking until golden brown.

Crust: I used store-bought pie crusts (Trader Joe’s) for this recipe , but feel free to make your own if you prefer.
𝑷𝒆𝒕𝒊𝒕𝒆 𝑾𝒊𝒏𝒆𝒃𝒆𝒓𝒓𝒚 𝑮𝒂𝒍𝒆𝒕𝒕𝒆
Ingredients
- 1 cup wineberries
- 1 tsp cornstarch
- 1.5 tbsp granulated sugar
- 1/2 lime
- 1 pie crust
- 1 tbsp panko or bread crumbs
- 1/2 tbsp cold unsalted butter
- egg wash
- turbinado sugar for topping
Instructions
Wineberry filling
- Mix wineberries, sugar, lime juice and cornstarch.

Roll out the dough
- Cut the dough in a circle and transfer to parchment paper.
Assemble the Galette
- Spread panko (or breadcrumbs) in the center of the pie crust to prevent crust from getting soggy.
- Place the berry mix in the center of the pie crust. Leave 2 inch from the edge and fold the pie crust edges. The idea is to keep everything contained within its own borders so that nothing spills over while baking.
- Add cut pieces of butter over the fruit.
- Brush the crust with egg wash and sprinkle turbinado sugar on top.

Bake Galette
- Air fry at 355C for 10 min (or bake 375C, 10 min in oven).
